Tony-Man was raised in a large family on a small farm in the town of Mandeville in the parish of Manchester, Jamaica. He spent most of his childhood farming with his father JB, cultivating coffee, exotic spices, fruits and vegetables which they harvested and sold to the local markets to support his family.

Their region of the high mountains is known for producing some of the world's most exotic spices and coffees because of its red, nutriennt-rich soil.

Tony-Man came to the U.S. in 1979 and began his journey in high-end restaurants. Compiling his hands-on experience, knowledge, and hard work, he opened four successful restaurants and Coffee Shops: Blue Mountain Coffee Shop in Minneapolis, MN, I and I Caribbean Cafe in Boulder and Nederland, Colorado.

With Tony-Man's wealth of knowledge and culinary marvels, he has created old, authentic family recipes, artisan coffees, gourmet sauces and spices. He's also created a Caribbean menu for catering!
